Smokehouse Breakfast Sausage Mixes can be added to ground venison, store bought meat (including non-seasoned ground pork) or any other ground meat. When using lean venison or beef trim, mix with 30 percent pork fat. To extend quantity of meat, mix lean ground meat with 30 percent ground pork shoulder and an additional 10 percent pork fat. Above ratios will produce lean breakfast sausage, as compared to store bought.
